How it’s made
1 (15 oz) can black beans
1 (15 oz) can of corn
1 (15 oz) can of diced tomatoes
1 small tomato chopped
4 large basil leaves chopped
2 cloves of garlic
1/2 small white onion chopped
1/2 of a yellow, orange or red bell pepper chopped
2 to 3 cups of chicken of vegetable stock
Salt and pepper to taste
Combine the above ingredients in a stew pot and let cook for about an hour on medium low. Add additional stock if you like a less chunky soup.
