This is a quick and tasty meal that is filling and flavorful.
What's Inside
2 tbs olive oil
1 14oz can of diced tomatoes
2 large garlic cloves chopped
1 small onion chopped
4 fresh basil leaves chopped
1 cup medium shrimp shelled and de-vained
1/2 cup tomato sauce or 1tbs of tomato paste
salt and pepper to taste.
Heat olive oil in a medium skillet. Add chopped onions and garlic and cook until tender. Add can of diced tomatoes and tomato sauce. Blend ingredients and allow mixture to cook for a few minutes. Stir in chopped basil and continue cooking. Once flavors have married add shrimp and cook until tender. Add salt and pepper to taste. Serve immediate as is or over you favorite pasta. My favorites are Penne, Linguine, and Farfalle pastas.
