1 head of Romaine lettuce

1/4 cup yellow bell pepper chopped

1/4 cup orange bell pepper chopped 

1/4 cup cucumber chopped

Olive Oil

Salt & Pepper

Lemon Pepper

Parmesan Cheesse shredded 

Slice head of Romaine length with, drizzle with olive oil, sprinkle on salt, pepper, and lemon pepper. Broil to desires crispness. Remove from oven, chop lettuce, add chopped cucumber and bell peppers. Top with shredded Parmesan. Drizzled with your favorite salad dressing for added flavor.

Steamed cabbage is one of the foods I either like or I don't. For many years I struggled to find a recipe that made the cabbage taste less like coleslaw and more like something savory. As fate would have it I was over a friends house and while I was there she whipped up a pot of steamed cabbage. Her version was flavorful and filling. I was hooked. Over the years I have modified it slightly but it still has all the delicious flavors I have come to love.  The photo above is the cabbage before begin steamed. 

What's inside 

1 whole head of green cabbage sliced

5-10 cherry tomatos cut in half

2tbs butter

3-4 sprigs of fresh time

1 small onion slices

Garlic powder 

Water 

Salt and Pepper to taste

In a large stew pot add a layer of cabbage, onion slices, butter square, and sprig of thyme. Sprinkle garlic power onto on layer. Continue layering in this manner until all the the cabbage, onion and thyme are in the pot. Add halved cherry tomatoes and enough water to cover the bottom of the pot. The cabbage will generate its own water as it reduces. Cover pot and allow cabbage to cook. Add salt and pepper as cabbage is cooking. Be sure to stir the pot occasionally to make sure all the flavors are incorporating. Cabbage will reduce to about half its original size. Once the leave have reached your desired softness, remove pot from  the heat. Serve as a side dish.

In my opinion sunny side up eggs are the third easiest breakfast egg to make. Only preceded by boiled and scrambled eggs. They are simple and with a bit of salt and pepper can be very flavorful. The runny yolks are not for everyone, but I would recommend at least giving them a try.

What's insides 

2 whole eggs

1/4 tbs butter

salt and pepper

Crack the egg into a small bowl. Melt the butter in a small skillet. When the butter starts to bubble pour the egg into the skilled.  Allow egg to cook for a couple of minutes until white become firm and the yolk is set. Once cooked, slide egg out of skillet onto a plate. Season with salt and pepper.

I first tried this salad at a restaurant in San Fransisco. It was my first time having a hot salad and I immediately fell in love with the smokey rich flavor. What I was not in love with was the price. This salad that took all of 10 min to prep and cook cost $15. I appreciated the induction to the new flavor and made it my business to observer while I ate. I made mental notes of the flavors, toppings, and char to tender ratio.  When I got back home I did some experimenting of my own. Considering I do not have access to a grill, I had to improvise and use the oven. Here is my version of this cheap and delicious dish.

What's Inside

1 head of Romaine lettuce

Olive oil

Salt and Pepper

Cucumbers 

Shredded Parmesan cheese

Slice the head of Romaine length wise down the center. Place on a baking pan. Drizzle each half of the lettuce with olive oil and sprinkle with salt and pepper. Place in an over set on broil for about 5 min.  The time will vary depending on how charred you want your salad to be. Once desire char is reached, remove from oven and serve. I like to top mine with shredded Parmesan and dices cucumbers. I dress with Italian salad dressing.

SO this one was an experiment. I wanted to call the recipe Not Quite Vodka Sauce because it contains many of the same ingredients as Vodka Sauce. I did quite a bit of adding and subbing of ingredients to get a flavor that was palatable.  I am not a heavy meat eater so I added Greek yogurt to the blend to add some protein and thickness to the dish.  The final product has a mild flavor. The tomato are definitely the star of this dish. 

What's Inside

2 tbs Olive Oil

Fresh basil

2 cans of diced tomatoes 

3 cloves of garlic minced

2 springs of Thyme

1/2 tbs butter

2 tbs greek yogurt

Grated Parmesan cheese

1 small onion chopped

1/4 Red Bell Peppers chopped

Spaghetti noodles

In a large skillet or sauce pan add olive oil and sauté onions, garlic, and bell pepper until tinder.  Add diced tomatoes to the pan. Blend veggies with the tomatoes and chopped herbs. Allow to cook for a few minutes. Stir butter and yogurt into the mixture. Add salt and better to taste. Allow to cook on low to medium heat for several minutes, stirring the pot regularly. Stir in cheese and allow to cook a couple more minute. Turn off heart and allow mixture to stand for a few minute. This will allow the sauce to thicken slightly.  Toss pasta in the sauce and serve.
